Comté (Charles Arnaud) is a French cheese produced in the Jura Massif region of Eastern France. It is the most popular cheeses in France with around 40,000 tones of annual production. Considered one of the finest cheeses in the world, a wedge of Comte reveals a pale yellow interior and a texture that can vary from silky and smooth to grainy. As this cheese ages, the flavours intensify and develops small crystalisation (amino acids), which is a the sign of a well aged cheese. Or as we like to call it, adult popping candy :)
