Australia’s Organic Dairy Farmers (ODF) Co-operative has showcased their premium quality organic milk by partnering with one of Australia’s best cheese makers to develop an Alpine-style cheese.
Fifth generation dairy farmer, John Smith , attributes the quality of his organic milk to the lush pasture that his Jersey herd grazes on and a holistic approach to their health. Just down the Great Ocean Road, cheese maker Matthieu Megard uses Smith’s milk to create a cheese that reflects the terroir of the region.
The rind is washed for two months, imparting a savouriness which gives way to a sweet and nutty finish. The semi-hard even texture is ideal for melting or enjoying on a cheese board.
