WHAT IS BOTTARGA BUTTER?
From Australian Chef Giovanni Pilu

Our bottarga is sourced and produced in Australia by Chef Giovanni Pilu. Known as Sardinia’s favourite seasoning, bottarga is deliciously salty air dried fish roe made from mullet fished on the Far North Coast of NSW.
We simply mix bottarga through Pepe Saya Cultured Butter.
