An interesting semi hard sheep's milk cheese from the south of Spain that is aged in rosemary. Very similar to Manchego, but slightly less dry and with a herby flavour. If you love your Manchego or sheep's milk cheeses, this is a must try!

Country of origin: Spain
Region, town: La Mancha
Source of milk: sheep's milk
Texture: firm, slightly crumbly
Flavour: rich, herbaceous, nutty
Aging time: minimum 3-6 month

Serving suggestion: Enjoy this grainy cheese, with something more fresh and smooth, like grapes or some quince paste.

Wine Pairing: Enjoy with a light fruity red wine - for a true Spanish experience.
