This mature and mellow blue cheese from central UK is somewhat distinct from other blues, with a firmer, more crumbly texture. A great introduction to blue cheeses, as the blue flavour isn't too overpowering and the cheese itself tastes similar to a mature cheddar, a little salty and rich in flavour. The perfect Blue Shropshire will be a rich orange in colour with distinctive blue veining and a golden crust.

Texture: Firmer, crumbly
Flavour: Sharp, rich, blue - not overpowering
Aging time: 12-24 weeks

Serving suggestion: A great addition to a salad or pasta, or on a cheeseboard.

Wine Pairing: It is best accompanied by a good English brown Ale or, as with Stilton, by a rich fortified wine.

    Have been unable to source this, the only blue cheese I like, for over two years. So was over the moon when my periodic Google search brought up this listing. I had it ordered and paid for in about two minutes! Delivered promptly to me in Launceston - and it is sooo good! Thank you!
