Bluestone is a rich, complex blue cheese made from cow's milk. This small cylindrical cheese, it has a distinctive-looking, thin, punctured, orange-brown-blue natural rind. Its paste is a creamy colour with subtle blue veins, showing dense buttery paste near the rind, but crumblier in the centre. Like Stilton, the curd is milled, allowing relatively mild blueing in a dense but slightly crumbly paste. Its taste is a balanced meld of creamy/buttery flavours with some fruitiness and a little saltiness. Its blue mould delivers subtle spikes of flavour in the mouth as it is eaten. It exhibits delicious complexity and length of flavour as the paste melts in the mouth. A very moreish cheese!
