Cornish Yarg is truly defined by its unique nettle-wrapped rind. Each spring, Lynher Dairy carefully forages two tonnes of nettles from local woodlands and fields, picking them sustainably to protect the ecosystem. The fresh nettles are wrapped around each wheel in a beautiful, traditional pattern of concentric circles.

As it matures over six weeks, Cornish Yarg develops a delicate bloom of white mold on its leafy rind. Inside, the cheese is crumbly and bright with a fresh, mushroomy flavour that sets it apart.

Source of milk:  Cow's Milk
Texture: Dusted with natural white mold, soft, with a crumble at its core.
Flavour: A fresh, lemony, mushroom-like taste, almost yoghurty notes.
Aging time: 4-6 weeks

Serving suggestion: Apples, grapes, and figs are excellent choices, Herbed Crackers or Oatcakes, Honey or Light Chutney; A touch of honey or a light, fruity chutney (like apple or quince) enhances Yarg’s creamy texture and brings out its subtleties without adding too much sweetness.
