New Cheeses Have Arrived!

This is one of those 'meant to be' meetings, when sheep's milk meets truffle it is like the heaven's opened up! As a sheep milk cheese fanatic, I am obsessed with this cheese. Now, I am not always a truffle lover, it is only in certain things that I eat it and this cheese does have quite a strong truffle taste, but the more I eat it, the more I enjoy it.
This cheese is from Tuscany in Italy and made with pasteurised sheep's milk and comes in a 2kg wheel - did I mention the perfect size for a cheese tower? Throughout the cheese, small pieces of white truffle are scattered through the pate. God, just writing this is making me hungry! The rind of this tremendous cheese is a little oily with a strong truffle aroma. Due to the long ageing process, this cheese has a very rich taste and firm texture. A slightly sour, truffle rich earthy and nutty taste, this is a cheese you won't be able to put down.
An incredible table cheese or one that is perfect for cooking adding depth and flavour to any meal. In particular great on pizza, in a risotto or grated over some pasta.
