Mimolette Vieille is one of France’s most iconic cheeses, aged for over 12 months by master affineur Cesar Losfeld in Lille. Known for its striking bright orange paste and cannonball-like rind, this cheese is both bold in flavour and dramatic in appearance. The long maturation develops a firm, crystalline texture with nutty, roasted hazelnut notes, hints of butterscotch, and a lingering savoury depth. Its rugged, cratered rind is the result of traditional affinage with cheese mites, a centuries-old French practice that helps aerate the surface and contribute to its distinctive flavour.

A little history / fun fact:
Mimolette was created in the 17th century when Louis XIV promoted French alternatives to Dutch Edam. Affineur Cesar Losfeld continues this tradition today in Lille, maintaining the signature mite-rind aging that makes Mimolette so unique.

    I love this cheese. It has become an essential part of any cheese platter I serve. Not only does it look interesting, it is deliciously nutty. I sneak a piece here and there with a crisp slice of apple.

    One of the best hard cheese ever - slice thinly it fits perfectly in sandwiches, you can make sticks of it for your kids - they will love it too. So tasty and getting perfectly with wine too..:)

    A long time favourite, used to purchase at a local shop that has since closed. So happy we have found it again!
