Mimolette Vieille – Affineur Cesar Losfeld

Mimolette Vieille – Affineur Cesar Losfeld
Description
Mimolette Vieille is one of France’s most iconic cheeses, aged for over 12 months by master affineur Cesar Losfeld in Lille. Known for its striking bright orange paste and cannonball-like rind, this cheese is both bold in flavour and dramatic in appearance. The long maturation develops a firm, crystalline texture with nutty, roasted hazelnut notes, hints of butterscotch, and a lingering savoury depth. Its rugged, cratered rind is the result of traditional affinage with cheese mites, a centuries-old French practice that helps aerate the surface and contribute to its distinctive flavour.

Wine Pairing: Pair with a robust Bordeaux or Rhône red, or try a malty Belgian ale for a regional twist. A dry sherry also complements its caramelised notes.
A little history / fun fact:
Mimolette was created in the 17th century when Louis XIV promoted French alternatives to Dutch Edam. Affineur Cesar Losfeld continues this tradition today in Lille, maintaining the signature mite-rind aging that makes Mimolette so unique.
