Los Cameros Cabra Semi Curado
Aged Goat’s Milk Cheese from La Rioja, Spain
There are cheeses that speak quietly… and then there are cheeses that tell you exactly where they come from.
Los Cameros Cabra Semi Curado sits firmly in the latter — a beautifully expressive goat’s milk cheese that captures the wild, herbaceous character of the Sierra de Cameros mountains in every bite.
High in the Sierra de Cameros, goats graze freely across rugged terrain rich in wild herbs and mountain vegetation.
It’s this environment — altitude, climate, and biodiversity — that gives the milk its distinctive personality. The result is a cheese that feels alive with place, offering a direct expression of the landscape it comes from.
How It’s Made
- Milk: Pasteurised goat’s milk
- Rennet: Animal (goat)
- Rind: Natural — developed with mould cultures and hand-bathed in extra virgin olive oil
After production, the cheese is cave-aged and regularly washed with olive oil — a traditional technique that:
- Controls mould development
- Creates a natural protective barrier
- Adds a subtle aromatic richness
Unlike industrial cheeses, there are no waxes or artificial coatings — just mould, oil, and time.
What to expect
A firm, pale paste sits beneath a rustic, living rind.
The surface evolves naturally, developing tones of ochre, brown, and green, a clear sign of genuine cave ageing and careful maturation.
Clean and lactic, with that unmistakable fresh, grassy lift of goat’s milk.
There are delicate notes of wild herbs and mountain pasture, giving it a beautifully natural aromatic profile.
This is where Los Cameros really shines.
- Texture: Firm yet supple
- Flavour: Lactic, herbaceous, and full
- Finish: Clean, lingering, and gently savoury
It strikes that perfect balance — expressive without being overpowering, making it incredibly versatile on a cheese board.

- Light-bodied reds (Gamay, Pinot Noir)
- Dry cider — enhances the lactic brightness
- Saison or farmhouse ales
- Quince paste (a classic Spanish pairing)
- Honey (especially floral or thyme honey)
- Marcona almonds
- Crusty sourdough or simple crackers
Why We Love It
