Fromagerie La Mémée
Bleu de Chevre
Bleu de Chevre
Description
Made by Fromagerie La Mémée, part of the Société Laitière de Laqueuille in the heart of the Auvergne mountains, this cheese reflects the rich dairy heritage of the region. Located at nearly 950 metres above sea level, the dairy works closely with local farmers whose goats graze on lush volcanic pastures. The cool mountain climate and traditional ageing cellars allow the cheesemakers to craft cheeses with depth, balance and true regional identity.
Bleu de Chèvre combines the bright tang of chèvre with the earthy elegance of traditional French blue cheese. The moist exterior continues into its creamy paste which is strikingly white, delicately marbled with blue veining. Creamy yet dense, it softens beautifully at room temperature, delivering a balanced flavour of fresh goat’s milk, gentle salt and subtle to medium blue spice.
Approachable for those new to blue cheese (medium intensity), yet complex enough for seasoned cheese lovers.
Country of Origin: France
Region, Town: Auvergne (Laqueuille)
Source of Milk: Goat
Texture: Creamy, dense, supple
Flavour: Tangy, lactic, lightly salty, earthy blue spice
Aging Time: Approx. 6-8 weeks
Serving suggestion: Allow Bleu de Chèvre to come to room temperature before serving to unlock its full aromatic potential. Enjoy it with fresh pear or fig, a drizzle of floral honey, toasted walnuts and crusty baguette or dark rye.
Wine pairing: A crisp Sauvignon Blanc (think Sancerre), dry Riesling or even a lightly sweet Jurançon beautifully balances the tang and salt, or even a off-dry Riesling to subdue the saltiness and intensity.
