This lactic-fermented goat’s milk cheese undergoes a slow, careful fermentation at gentle temperatures, allowing its delicate flavours to develop fully.
Shaped into its distinctive O, Florence maximizes surface area, making it a dream for affinage. Its signature wrinkly rind owes its character to geotrichum—a unique mould cultivated exclusively in their factory and used in their finest cheeses. Every handmade wheel is a testament to the beauty of artisanal cheesemaking, with subtle variations that make each batch truly one of a kind.
Beneath the rind, Florence’s paste is bright and creamy, offering a gentle acidity that deepens into a luscious, fudge-like texture as it ripens. The circular shape encourages geotrichum to work its magic, enhancing complexity and balance.
Pair Florence with Champagne, aged Semillon, or Chardonnay to highlight its soft, creamy notes. Available only from October to April, when the goat’s milk reaches its peak richness, this seasonal delight is the perfect indulgence.
