Kongwak is a raw milk farmhouse cheese from Prom Country Cheese in South Gippsland, made with certified organic cow's milk from their own Glen Moidart farm.

Matured for around six months, the cheese develops a full, savoury character before the addition of whole native pepper berries brings an unmistakably Australian twist. The pepper berries add bursts of spice and subtle floral notes through the rich, lingering paste, finishing with a distinctive peppery warmth.

It's a cheese with plenty of personality, but the spice doesn't dominate — the quality and complexity of the raw milk remain very much at the centre.
