Washed gently by hand with Marc de Gewurztraminer throughout its 15–30 days of ageing, it develops a delicate sweetness and aromatic warmth that makes it unbelievably moreish.
Under its blushing rind, the paste is soft, smooth and silky. The flavour is savoury, buttery and subtly fruity, with a gentle floral note from the Gewurztraminer marc.
