A wonderfully aromatic creation from Beppino Occelli, this Piedmontese cheese combines cow's and sheep's milk with whole black peppercorns and fragrant pink pepper berries.
Matured for at least four months in the cellars of Val Casotto on wooden boards from the surrounding valley, the cheese develops a rich, rounded character before the pepper brings another dimension. Black pepper adds warmth and spice, while the pink pepper berries contribute a more fragrant, gently floral quality.
The result is savoury and beautifully aromatic, with bursts of pepper throughout the paste and a lingering spicy finish that complements rather than overwhelms the richness of the cheese.
