Description
A meeting of Piedmont and the Scottish Highlands, Occelli al Malto d'Orzo e Whisky is one of Beppino Occelli's most unusual and distinctive creations.
Made from cow's and goat's milk, carefully selected wheels undergo a long maturation before being refined with malted barley and whisky. The outside is coated with barley, giving the cheese its striking appearance while the whisky contributes warmth and aromatic depth to the mature paste.
Bold and complex, the flavour combines the richness of long-aged cheese with toasted malt, cereal notes and the distinctive warmth of whisky. It's a cheese made for slow eating — and one that becomes even more interesting when paired with a glass of the spirit that inspired it.
