Indulge in the exquisite world of Pyramide de Chabris, a masterpiece of French goat cheese. Hailing from the enchanting Loire Valley, this unique cheese is renowned for its iconic pyramid shape, making it a captivating addition to your cheese collection.
The unique, truncated pyramid shape of this cheese is believed to have originated from an incident during Napoleon's return from an Egyptian campaign. Legend has it that, displeased with its resemblance to Egyptian pyramids, he used his sword to trim the top, resulting in the distinct shape. This artisanal dairy, situated in the heart of the Centre region in France, is a family-run establishment known for crafting traditional goat's milk cheeses on the crossroads of Touraine, Berry, and Sologne.
Each of these cheeses undergoes maturation beneath a textured geotrichum rind, with a generous coating of salted, ground charcoal. This aging process lasts for approximately four weeks, during which the cheese develops a rustic appearance, adorned with hints of blue mold on the rind. The interior boasts an ivory-white paste that delivers a delightful interplay of sweet, salty, and slightly acidic flavors. As the cheese matures, its texture transforms from soft to firm, offering a captivating evolution of taste and texture.
