Made by Fromagerie Agour in the French Basque Country, this traditional cow's milk Tommette is gently cold-smoked over beechwood, creating a beautifully balanced cheese that celebrates both the quality of the milk and the artistry of traditional smoking.

Beneath its natural rind lies a smooth, supple paste with a creamy texture and delicate ivory colour. The gentle smoking enhances the cheese's natural buttery sweetness, adding subtle notes of toasted hazelnuts, warm wood smoke and a savoury finish without overpowering its rich dairy character.

Wonderfully versatile, this cheese is equally at home on a cheeseboard, melted into rustic dishes or enjoyed simply with fresh bread and charcuterie.

Texture: Semi-hard with a smooth, supple paste and natural rind.
Flavour: Creamy and buttery with delicate smoky aromas, toasted nuts and a gentle savoury finish.
Aging time: Traditionally matured for 2/3 months before being naturally cold-smoked.

Serving suggestionAllow to come to room temperature before serving. Pair with crusty sourdough, cured meats, cornichons and roasted walnuts, or melt over potatoes and grilled vegetables for a delicious smoky twist.

Wine Pairing: Irouléguy Blanc, Jura Chardonnay, Pinot Noir or a dry Basque cider.
