Made by Prom Country Cheese in South Gippsland, St Clair is a certified organic raw cow's milk cheese that lets the character of the milk take centre stage.

Firm and beautifully balanced, it has a rich, inviting aroma with gentle nuttiness, buttery notes and a touch of earthiness that reflects its raw milk origins. On the palate, St Clair is savoury and full-flavoured with a pleasant salty bite and a lingering finish.

It's an easy cheese to enjoy on its own, but equally at home on a cheeseboard with fresh fruit, good bread and a glass of wine.

Country of origin: Australia
Region, town: Moyarra, South Gippsland, Victoria
Source of milk: Raw certified organic cow's milk
Texture: Firm and dense with a smooth, slightly supple paste
Flavour: Savoury and buttery with subtle nuttiness, gentle earthy notes and a pleasant salty finish
Aging time: Approximately 6 months

Serving suggestionAllow to come to room temperature and serve with fresh pear or apple, roasted nuts and crusty sourdough. Its savoury character also makes it a great cheese for cooking or grating over simple dishes.

Wine Pairing: Chardonnay, Pinot Noir or a medium-bodied Victorian Cabernet.

*All our cheeses are cut by hand so the weight may vary slightly :)
