Tomme Brûlée is an artisanal sheep’s milk cheese from the Basque Country, crafted by the renowned Fromagerie Beillevaire. Its name, meaning “burnt rind,” comes from the unique finishing step: after aging, the rind is lightly scorched with a hot iron, giving it a striking dark, rustic appearance. Beneath the caramelised crust lies a supple, golden pâte with rich, nutty, and slightly caramelised flavours balanced by a creamy sweetness. The result is a cheese that is as beautiful to look at as it is delicious to taste. This cheese is also unique in the way that it can be curled, just like a Tete de Moine!

Country of origin: France
Region, town: Basque Country
Source of milk: Ewe's milk
TextureSupple, semi-firm, creamy
Flavour: Nutty, buttery, slightly sweet with hints of caramel
Aging time: Minimum 3 months

Serving suggestion: Serve wedges of Tomme Brûlée with dried apricots, walnuts, or cherry preserves for a Basque-inspired pairing. It’s also excellent shaved into salads, melted into gratins, or simply savoured on fresh country bread.

Wine PairingPair with a robust red like Madiran or a fruity Irouléguy. For a lighter option, try a dry rosé from Provence or a sparkling cider from the region.

Beautiful flavoured cheese with a creamy rich tasty, with a hint of smokiness. I served this cheese with a Pinot noir as a before dinner starter. My guests loved it.

Not a lot of flavour, but a good cheese for holding shape, easy to cut.
