Tomme Brûlée is an artisanal sheep’s milk cheese from the Basque Country, crafted by the renowned Fromagerie Beillevaire. Its name, meaning “burnt rind,” comes from the unique finishing step: after aging, the rind is lightly scorched with a hot iron, giving it a striking dark, rustic appearance. Beneath the caramelised crust lies a supple, golden pâte with rich, nutty, and slightly caramelised flavours balanced by a creamy sweetness. The result is a cheese that is as beautiful to look at as it is delicious to taste.This cheese is also unique in the way that it can be curled, just like a Tete de Moine!

Wine Pairing: Pair with a robust red like Madiran or a fruity Irouléguy. For a lighter option, try a dry rosé from Provence or a sparkling cider from the region.
