What a incredible looking cheese! It is easy to see why it is called Tomme Brulee from the beautifully singed rind, just like a brulee. This unique cheese is from the Basque region of France and made from ewe's milk. At the end of maturation, the rind is singed with a naked flame which leaves the burnt effect, but does not detract from the taste. This cheese is also unique in the way that it can be curled, just like a Tete de Moine!

Flavour: Sweet, rich, very subtle smokey taste
Aging time: Minimum 3 months

Serving suggestion: This cheese goes well with just about any accompaniment you can imagine.

    Beautiful flavoured cheese with a creamy rich tasty, with a hint of smokiness. I served this cheese with a Pinot noir as a before dinner starter. My guests loved it.

    Not a lot of flavour, but a good cheese for holding shape, easy to cut.
