The Walnut Liqueur Tomme des Croquants is produced in the shape of a small ‘tomme’, 14cm in diameter, 5cm thick and 850 grams in weight. The moulds used in the moulding process give the cheeses their regular and concentric ridges. The maturing process takes place in humid and cool cellars (11°C). The cheeses are rubbed 3 times with a walnut liqueur produced by the Distillerie du Périgord de Sarlat, making it an authentic local speciality. The Walnut Liqueur Tomme des Croquants is characterised by its dark brown rind. The inside of this creamy coloured cheese is soft and smooth, with delicate hints of walnut, while the rind has stronger walnut flavours.

Flavour: combines the mild taste of the plain Tomme des Croquants with the woody taste of the walnut liqueur

Wine Pairing: Pair with a light red wine, or a nuts wine or liqueur.

    But not bad. A very unique cheese. However, won't buy this all the time. Not really a taste I enjoy on a platter

    As a Savoyard marooned in Australia, I am always on the hunt for cheeses that approach the holy trinity from that region: Beaufort, Tomme and Reblochon.. This cheese is pretty good. It’s complex and the walnut liqueur gives it a lovely subtle complexity. I will be ordering again - unless I finally find real Savoyard Tomme of course.

    Delicious. I am truly glad I tried this one, it is not my usual type of cheese. I love the smooth texture and the walnut liqueur flavour does go right through the cheese but in a non overpowering way, though the rind is a very special treat and will have you wanting to steal it off everyone else's slice. Bought a second lot to share with a fellow cheese lover.

    I bought this cheese on a whim and it was delightful. A nice medium firm texture with a beautiful walnut flavour that was subtle yet pronounced. Will definitely purchase again.
