One of France’s oldest cheeses, Cantal Entre-Deux AOP is a true farmhouse classic that has been loved for centuries. Aged between three and seven months, this semi-hard cow’s milk cheese strikes a perfect balance between the fresh, lactic brightness of young Cantal and the bold intensity of older “Vieux” Cantal. Expect a rustic, nutty, and slightly tangy flavour, with a firm yet supple texture that makes it incredibly versatile. Cantal is often called the “ancestor of cheddar” thanks to its crumbly curd structure, but its unique character and AOP protection make it unmistakably French.
