?? Introducing our Flannel Flower - a creamy, Australian artisanal cheese inspired by the iconic French soft cheeses like Brie, but with a distinct Aussie identity. Named after Australia's beloved soft-petalled wildflower, this cheese is a celebration of local flavours and craftsmanship.

Crafted in 1kg wheels reminiscent of traditional French Brie, Flannel Flower features a soft, dense paste and a delicate, bloomy rind. As it matures, its creamy interior transforms from mildly nutty to lusciously oniony and cauliflower-like, offering a unique taste journey.

Aspect: Adorned in a white/cream hue, its bloomy rind gently ripples, evolving with flecks of brown as it ripens.

Texture: Initially dense and semi-soft with a subtle chalkiness at its core, Flannel Flower gradually softens into a creamy, slightly oozy delight as it matures.

Flavour: Beginning with mild, creamy undertones that hint at nuttiness, the flavour profile matures into a more robust, cabbagy, and yeasty character over time.

Enjoyment: Perfect for warmer months, indulge in Flannel Flower on a cheeseboard, spread generously over crusty bread or crackers, or elevate your salads with its creamy goodness.

Presentation: Each piece is delicately wrapped in micro-perforated lactic cheese paper, preserving its freshness and flavour.

Pairing: Enhance the experience with sparkling wines, cool climate Chardonnay, Chenin Blanc, Albarino, or Pinot Grigio. For those who prefer reds, opt for a light fruity Beaujoulais or an un-oaked Pinot to complement the rich, nutty essence of Flannel Flower.

Experience the taste of Australia's countryside with Flannel Flower - a cheese that captures the essence of our land in every creamy bite. ??
