Indulge in the extraordinary: 22 months of perfection, Gruyere Alpage, a cheese like no other.

Gruyère AOP Grand Affinage has a full-bodied and intense, slightly woody taste, which it owes to its maturation period of 22 months. Its paste has a beautiful crystallization and is slightly brittle, in tones with yellowish reflections.

Region, town: Moléson-sur-Gruyères, canton of Fribourg
Source of milk: Unpasteurised Cow's milk
Texture: Firm, Dense with crystallization. Slighly brittle
Flavour: full-bodied, intense, slighly woody taste.
Aging time: minimum 22 months

Wine Pairing: A buttery Chardonnay complements the creamy texture of Gruyère and enhances its nutty notes. A light and fruity Pinot Noir pairs well with Gruyère. An aged dry sherry, such as an Amontillado or Oloroso, can provide an intriguing contrast to the cheese's nutty flavors.

    Firm textured and full flavoured gruyere is a great cheese for cheeseboards, with crackers and stand-alone nibbling.
