Introducing La Primavera, a cheese inspired by the enchanting emergence of spring in the Adelaide Hills. Crafted with the first milk of the season and classic alpine techniques, this Australian semi-hard raw milk cheese embodies the essence of early spring. Grazing on native grasses after winter, thier cows produce milk with a distinct freshness, resulting in a smooth, buttery flavour with subtle nuttiness, hints of green grass, earthy cellars, and sweet summer fruits. Meticulously crafted and aged for at least 120 days to comply with regulations, La Primavera is launched annually in February, adorned with dried meadow flowers, offering a sensory journey that captures the spirit of the season.

Experiment more with the slightly bigger, bolder reds like Nebbiolo and Dolcetto. Not interested in the wine route, opt for a quality gin! As a martini or mixed with some soda water or mediterranean tonic, it is definitely a winner.
