The result of a unique terroir and the use of traditional production techniques, Lescure Butter carries the prized Charentes-Poitou PDO. Milk, sourced exclusively from the Charente, Charente-Maritime, Deux-Sèvres, Vienne and Vendée departments, reflects the area’s character, natural richness and traditions.

The region’s sunny ocean climate, mild winters, hot summers and high rainfall provide ideal rearing conditions for dairy herds and growing conditions for grain farmers. The high quality fodder and grains provide the cows with exceptional feed, which produces exceptional milk that is high in fat.

Lescure collects the milk and pasteurises it before skimming the cream and adding cultures that develop over 16 hours. This gentle fermentation produces Lescure’s smooth and creamy texture, rich cream aroma with hints of hazelnut and a delicate grassy flavour.

The cream is then churned using Lescure’s expert technique that preserves its texture whilst removing whey, which produces a butter that’s low in moisture. A variety of formats is produced to suit both retailers and chefs. Lescure butter is available in both unsalted ‘doux’ and light salted ‘demi sel’ recipes.

Notably, Lescure butter is prized by Pastry Chefs for its bright, clean flavour and balance, as well as its incredible technical attributes that provide excellent lamination and maximum ‘puff’ in puff pastry.*
