Livarot is one of the most flavorful cheeses from Normandy. This cow's milk cheese is easily recognizable by the bands that encircle it. It has a smooth, orange rind and a strong smell. On the palate, Livarot offers a pronounced, slightly salty taste with floral aromas.

Livarot AOP Cheese: A Century-Old Tradition

Known as the "colonel" for its signature five bands, Livarot AOP cheese gained prominence over a century ago when Auge farmers began wrapping it with natural rushes from nearby marshes. These rushes prevented the soft cheese from collapsing, allowing farmers to carry it in their bags for a day’s work in the fields. While paper bands eventually replaced rushes, the AOP standard has reverted: starting May 1, 2017, the most common format (the "4/4") must be wrapped in natural "laîches."

Crafted in the heart of the Auge region, this cheese benefits from the lush pastures of the Normandy bocage. During its minimum three-week aging period, Livarot is regularly washed to enhance its flavor and texture. Enjoy the rich heritage and robust taste of this exceptional cheese.
