Rouzaire Selection, crafted by Lincet

One of France’s great bloomy-rind classics, Chaource AOP hails from the borderlands of Champagne and Burgundy. Selected by the renowned Rouzaire family and crafted by Fromagerie Lincet, this traditional whole cow’s milk cheese is often considered an ancestor of famous triple-crème cheeses such as Brillat-Savarin.

Beneath its snowy white rind lies a luscious, ivory paste that evolves beautifully with age. Young Chaource is fresh, lactic and delicate, while a more mature cheese develops a soft, creamy layer beneath the rind with notes of butter, fresh mushrooms and toasted hazelnuts. Rich without being heavy, it is a wonderfully elegant cheese that showcases the character of its historic terroir.

Serving suggestion: Bring to room temperature and serve with a crusty baguette, fresh strawberries, figs or a drizzle of acacia honey. Excellent on a cheeseboard or baked whole until molten.

Wine Pairing: Champagne, Chablis, Irancy Pinot Noir, Crémant de Bourgogne or a crisp sparkling wine.
