Introducing Mont Cheval, a semi-hard alpine cheese that embodies the finest Italian cheese-making traditions and the rich flavours of the Adelaide Hills. Crafted with raw milk and aged to perfection, Mont Cheval stands out with its unique infusion process, where it is washed twice weekly with the spent Pinot Noir lees from nearby Murdoch Hill Wines for a minimum of three months. This meticulous care and attention imbue the cheese with a sophisticated and complex taste that sets it apart.

Mont Cheval offers a symphony of evolving flavours that delight the palate with every bite. It begins with subtle hints of roasted meats and toasted spices, which are complemented by a grassy and nutty undertone. The cheese features a distinctive deep purple rind, developed from the Pinot Noir lees, which adds a spicy juniper finish, making it truly unique.

Mont Cheval is a seasonal delight, available only from June to September. Its limited production ensures that each wheel is a masterpiece of flavour, crafted to perfection immediately after the vintage.
