Fromagerie Moléson
Vacherin Fribourgeois AOP Rustic Frisé
Vacherin Fribourgeois AOP Rustic Frisé
Description
A distinctive expression of one of Switzerland's great cheeses, Vacherin Fribourgeois AOP Rustic Frisé is crafted by Fromagerie Moléson in the Canton of Fribourg, at the foothills of the Swiss Pre-Alps.
After 16 weeks of careful maturation, only the best wheels are selected for a special period of affinage. This additional cellar care creates the cheese's characteristic pleated or "frisé" rind while encouraging the paste beneath to become exceptionally creamy and supple.
Rich and full of character, Rustic Frisé balances the gentle tang typical of Vacherin Fribourgeois with a deeper, more robust savouriness and wonderfully creamy finish. It's an expressive cheese without becoming overpowering, with the special maturation bringing remarkable depth and texture.
