Bleu des Causses is a semisoft French blue cheese. It strikes a skillful balance between whole cow's milk and Penicillium roqueforti, developing its full organoleptic qualities during the seventy days (minimum) it spends aging in the caves of the Gorges du Tarn in the Languedoc region of southern France.
